Our role of honour for 76 Portland Place
The very best food needs two very simple ingredients, it needs to highest possible quality of ingredients and they needs to be in season so they are at their very best. At 76 Portland Place we are very proud of our kitchen team as they work tirelessly to ensure our menus are seasonal and fresh. We work closely with our suppliers to provide you with the tastiest mouth watering dishes.
Our Smoked Salmon
The Fulberg family has been involved in the fish business for 4 generations. In 1936 W&F Fish was established in Chalk Farm, where the company began curing its own salmon. Today the founders' son Michael, together with his son, still runs the business at the same site. They continue to strive to provide the best smoked salmon, using the best sourced raw fish, traditional salting, drying & smoking methods. Although smoked salmon can now be bought anywhere W&F Fish put the emphasis squarely on quality and we think that you really can taste the difference. The fish is never frozen and stock is held for as short a time as possible with customers typically receiving smoked salmon that has been taken from the kiln earlier that morning.
Our Coffee
Working closely with the Ethical Trading Initiative, Jeremy Torz (left) and Steven Macatonia trade directly with small family farms and co-operatives across the world, buying top quality Arabica beans which are then hand roasted in small batches at their roastery in East London. We have worked with Union Roast from day one and love their enthusiasm to bring real coffee to our customers.
Our Cherries
Two years ago FoodLovers Britain highlighted the decline in cherry trees. Having grown up surrounded by cherry, apple & pear trees as a child Jules our Creative Manager was keen we get involved with the campaign to "save our cherry trees". Consequently we rented our first cherry trees in 2008. This year we harvested over 35 kilo which we shared amongst our sites & we look forward to 2010 when we will have a supply of cherries direct from the Michael Dallaway's farm.
Our Eggs
H&J won the Good Egg award from Compassion in World Farming in May 2009. Patrick Harbour one of our owners received the award at a ceremony, presented by Penelope Keith. The Good Egg Award is presented to companies who commit to go cage free in favour of eggs from free-range, organic or barn kept hens. Their combined policies mean that approximately 20 million hens will live cage-free every year.
Our Bread
Bread is an emotive subject, with everyone having an opinion on the ideal sandwich loaf, or the best type of bagel. We use a number of bakeries to supply our sites, and allow our chefs to choose who they prefer, but our most recent signing is Flour Power City. Fans for many years through their legendary cheese straws sold at Borough Market, we are excited that they now supply us, particularly their speciality breads. Flour Power City uses only the finest ingredients, such as the lovingly milled flour from Shipton Mill, which is why many of their breads are certified by the Organic Food Federation (OFF). If they are unable to obtain certified organic ingredients due to fluctuations in quality, they have a network of suppliers who specialise in 'free range' products such as un-waxed fruit and vegetables, which are grown without the use of pesticides, and additive-free foodstuffs.
Our Honey
Having been alerted to the shortage of honey bees in this country, we at 76 Portland Place have recently sponsored some of our very own beehives at the Regents Park apiaries through the fabulous people at Pure Food. This allows us to have our very own wild honey. This honey takes on the flavours of the myriad flowers in the park, and the lightness and complexities of flavour make it unique. As the honey season progresses from June through to August the flavour and colour of the honey gradually becomes stronger and darker.
Our Milk
Fed up with the large dairies who dominate the industry we managed to track down an independent company, based in West London, who buy their milk from small dairies in the South of England. This family run business which has been going for 34 years really is an excellent example of how smaller companies tend to provide better service. If any of our sites has a problem they can go directly to Heidi, Allan's daughter, and she will immediately provide a solution.
Our Jams and Marmalades
England Preserves specialise in making artisan jams & preserves using the finest organic ingredients. They use local high quality ingredients from farmers they know, as well as inspiration from the past to create a collection of preserves that celebrate the authentic flavours of the countryside. Their jams are bright and beautiful in colour, rich in texture and full of distinct fruit flavour. Nothing is synthetic, just good honest ingredients, cooked with copious amounts of care! We loved the redcurrant, rhubarb and vanilla jam so much that we just had to try the others. It is produced in Deptford, South-East London.
